Heartland Granola Raisin Pancakes*

Ingredients

2 ½ cups all-purpose flour
3 Tbsp sugar
2 Tbsp baking powder
¼ tsp salt
3 beaten eggs
2 ¾ cup milk
1 cup Heartland Lowfat Raisin Granola
enough butter or oil for greasing the pan

Directions

Mix flour, sugar, baking powder and salt in a large bowl. Add eggs and milk and stir just until mixed through. Add granola to batter. Pour pancakes into preheated and greased pan. Cook over medium heat for 3 min each side.

Popcorn Granola Snack Bars

Ingredients

nonstick cooking spray
½ cup honey
½ cup peanut butter
1 cup Heartland® Granola
1 cup peanuts, roasted and salted
3 cups popped popcorn

Directions

Line an 8x8 or 9x9 baking pan with foil. Spray foil lightly with cooking spray; set aside. Heat honey in a large saucepan until boiling. Add peanut butter and stir until well blended. Remove pan from heat and stir in granola, peanuts, and popcorn to coat. Gently press mixture evenly into baking pan, refrigerate until cool, cut into bars and serve.

Cheddar Apple Breakfast Lasagna

Ingredients

Topping:
1 cup sour cream
1/2 cup brown sugar
Lasagna:
12 slices French toast
1 8-ounce package sliced ham
2 cups sharp cheddar cheese
1 20-ounce can apple pie filling
1 cup granola
10-inch flour tortillas
Peanut butter
Honey
Granola cereal
Bananas

Directions

  1. Blend sour cream and brown sugar. Refrigerate.
  2. Preheat oven to 350F. Layer six pieces of French toast in a buttered 9-by-13-inch pan. Layer ham and half of the cheese over toast. Place remaining French toast slices on top. Spread apple pie filling over toast and sprinkle with remaining cheese and granola. Bake 25 to 35 minutes, until thoroughly heated. Serve with a dollop of sour cream topping. Serves 6.

Granola Wraps

Ingredients

10-inch flour tortillas
Peanut butter
Honey
Granola cereal
Bananas

Directions

 

  1. Spread a thin, even coating of peanut butter and honey on tortilla, leaving about 1/2 inch uncovered around the edge.
  2. Sprinkle a thin layer of granola over the peanut butter and honey.
  3. Slice a banana in half from end to end and place it in the tortilla¹s center. Roll up tortilla and slice into spirals for a snack, or keep it whole to eat as a sandwich.

Granola Coffee Ring

Ingredients - Filling

½ cup butterscotch-flavored baking chips
½ cup chopped nuts
½ teaspoon ground cinnamon

Ingredients - Cake
1 cup granola cereal
1 cup LAND O LAKES® Sour Cream
½ cup LAND O LAKES® Butter, softened
½ cup sugar
3 eggs
½ teaspoon freshly grated orange peel
1 ¼ cups all-purpose flour
¾ teaspoon baking powder
¾ teaspoon baking soda
½ teaspoon salt
Ingredients - Glaze
½ cup butterscotch-flavored baking chips
1 tablespoon shortening
2 tablespoons chopped nuts

Directions

  1. Heat oven to 350°F. Combine all filling ingredients in medium bowl; set aside.
  2. Combine granola cereal and sour cream in large bowl; let stand 5 minutes to soften cereal. Add butter; beat at medium speed, scraping bowl often, until well mixed.
  3. Add sugar, eggs and orange peel; continue beating until well mixed. (Mixture will be slightly lumpy.) Add all remaining cake ingredients; continue beating until well mixed.
  4. Spoon half of cake batter into greased and floured 10-inch angel food cake (tube) pan or 12-cup Bundt® pan. Sprinkle with filling. Spoon remaining batter over filling.
  5. Bake for 45 to 55 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pan. Cool completely.
  6. Melt 1/2 cup butterscotch chips and shortening in 1-quart saucepan. Immediately drizzle over cooled cake; sprinkle with 2 tablespoons nuts.

Apple Butter Crisp

Ingredients

4 Tbs. margarine ⅓ cup brown sugar 1 egg white 1 tsp. vanilla 1 ¼ cup all purpose flour 1 tsp. baking powder ½ tsp. baking soda 1 ½ cup Heartland® Low Fat Granola ¾ cup apple butter 1 Tbs. all purpose flour

Directions

Preheat oven 375 degrees.

  1. In large bowl, cream margarine, vinalla and brown sugar. Add egg white and beat again.
  2. Beat in flour, baking powder and soda. Stir in cereal.
  3. To the apple butter add flour and stir till blended.
  4. Press about two-thirds of the dough into bottom of a greased 8x8 inch baking pan. Spread apple butter mixture over dough. Crumble remaining one third of the dough on top of the fruit. Bake 25 to 30 minutes. Cool completely.

Chocolate Peanut Butter Treats

Ingredients

2 cups (approximately 11 ounces) milk chocolate chips 2 cups (approximately 11 ounces) peanut butter chips 2 Tbs. oil 1 box (16 ounces) Heartland® Granola Cereal (original or raisin)

Directions

 

  1. In 2-quart microwave-safe bowl, combine chocolate, peanut butter chips and oil. Microwave on HIGH (100% power) for 1 ½ to 2 minutes, stirring every 30 seconds until melted.
  2. Stir in cereal until well coated.
  3. Drop by tablespoons onto wax paper. Refrigerate until set, 15-20 minutes. Store in covered container in refrigerator

Makes 2 ½ Dozen.

Blonde Brownies

Ingredients

1 cup flour
1 teaspoon baking powder
½ tsp. salt
½ cup butterscotch chips
3 Tbs. butter
1 cup brown sugar
2 eggs
½ teaspoon vanilla
1 ¾ cup Heartland® Granola Cereal

Directions

  1. In a small bowl, combine flour, baking powder and salt; set aside.
  2. Melt butterscotch chips and butter. Cool 5 minutes.
  3. Add brown sugar, eggs, vanilla and cereal. Blend in flour mixture.
  4. Spread in 8" x 8" pan. Bake until toothpick comes out clean, about 30 minutes.
  5. Cool before cutting into 2 inch squares.

Heartland's Honey Granola Apple Crisp

Ingredients

4 to 5 cups sliced apples
1 Tbs. lemon juice
¾ to 1 cup honey (depending on amount of apples)
½ cup flour
2 cups Heartland® Granola Cereal (any flavor)
1 cup brown sugar
¼ tsp. salt
½ cup butter, softened
ice cream, if desired

Directions

Place sliced apples in a greased baking dish. Sprinkle with lemon juice.
Drizzle honey on top of apples. Mix flour and next three ingredients together. Cut the softened butter into mixture until it resembles coarse crumbs. Bake at 375°F for 45-55 minutes, or until the apples are cooked and the crust is golden brown. Serve warm with ice cream, if desired.
