Cranberry Orange Pecan Oat Bran Muffins


1½ cup oat bran

1 cup all-purpose Flour

1 teaspoon baking powder

1 teaspoon baking soda

½ teaspoon salt

2/3 cup brown sugar, firmly packed

1 cup dried cranberries

½ cup pecans or other nut

½ cup milk

1/3 cup vegetable oil

1/3 cup orange juice

1 egg

½ cup vanilla yogurt or sour cream

1 teaspoon orange zest


Preheat oven to 375 degrees. Spray muffin pan with nonstick cooking spray. Stir together oat bran, _our, baking powder, baking soda, salt and brown sugar. Then add cranberries and pecans. In a separate bowl, lightly whisk milk, vegetable oil, orange juice, egg, yogurt or sour cream and orange rind. Add to _our mixture, stirring just until moistened. Spoon into the prepared muffin pan until almost full. Bake for 18-20 minutes or until golden brown. Let muffins cool 5 minutes before removing from pan. Makes 12 muffins.
